Schoepf's has been slinging Central Texas-style pit BBQ at 702 E Central Ave in Belton since 1993 — mesquite-coaled brisket, three kinds of sausage, thick pork chops, and the assembly-line ordering system where you pick meat by the pound on the right side and work left toward sides. Texas Monthly gave it an honorable mention in 2025, and in 2009 they opened Schoepf's Backyard, a live music venue in the rear that went on to win the Texas Country Music Award for Live Music Venue of the Year. Fort Cavazos soldiers make the 20-minute drive down I-35 because this is the closest honest Central Texas BBQ within range of post.
